Rich and Complex
These wines truly reflect the essence of rich black fruit, quite often with notes of mocha and hints of spice. Depending on the varietal used, oak is often present in this category and when used well, can add a layer of complexity and length to the wine. We take care to asses tannin level (the dryness found at the end) in these wines as it plays such an important part in the overall make-up. "Well-integrated" or "velvety" tannin are generally what we are after.
