Low Intervention Wines

What are low intervention wines? To clear a few things up, this basically refers to the minimal, if any, use of chemicals during farming and production, but also refers to the simplicity of the winemaking. Many of these wines will avoid any filtering or fining and will allowed to ferment spontaneously, using indigenous yeast strands from the area, all while avoiding any use of sulphites. Sadly, a lot of people are put off by the term 'Biodynamic' or 'Natural' wine, as the image that goes with it is of 'funky' oxidised, farmyardy wines. This is definitely not the case. If anyone has been to any of our tastings or sampled the wines in the enomatics, it is almost guaranteed that you will have tried a 'natural' wine, without even knowing.
